    The Amazing Benefits of Celery :


    If you think of celery just as a light, juicy, crunchy add on to salads and Chinese recipes or consider it only as a low calorie vegetable, think again. This often overlooked and underrated vegetable is a good source of calcium, vitamins, potassium and magnesium. Almost every part of celery can be eaten. It can be juiced, the leaves can be added to salads for a pungent twist, while the stalks lend a delicious flavor to salads, soups and cooked meals – not to mention livening up an otherwise mundane cocktail. Hippocrates, the father of medicine, wrote that this vegetable can be used to calm our nerves and provide a great relief to joint pains, asthma, acne or lung infections.

    The United States produces over 1 billion pounds of celery every year, to be served as a “major plate vegetable”. This uncrowned hero is available in different varieties including Australian celery, Indian celery, Vietnamese celery, water celery etc.

    The important minerals in this magical vegetable effectively balance the body’s blood pH, neutralizing acidity.

    Celery juice acts as the perfect post-workout tonic as it replaces lost electrolytes and rehydrates the body with its rich minerals

    How can we include celery in our diet?


    Italian Celery and Mushroom Salad



    Required :


    • 7 tablespoons Extra Virgin Olive Oil
    • 1 pound mushrooms, wiped clean and sliced as thin as possible
    • 2 tablespoons fresh lemon juice
    • 8 ribs celery, shaved paper thin
    • 1 cup shaved cheese
    • Sea salt / rock salt and freshly ground black pepper, to taste
    • 1/4 cup chopped parsley


    Directions :


    Take a skillet and heat 3 table spoon olive oil over medium high heat. Add mushroom and saute after the oil gets hot until they turn golden brown, for about 5-6 minutes. Season the mixture with little salt and pepper and let it cool for sometime. To prepare the salad, take 4 table spoon of olive oil and whisk it with lemon juice. Add a little salt and pepper and mix it with celery, cooled mushrooms, cheese and parsley.




    Goddess immunity juice:


    This juice has a ton of vitamins and minerals. It is high in iron, calcium and is alkalizing.


    2 stalks Celery
    1/2 – 1 Apple
    1/2 inch of Ginger
    Handful Parsley
    1 cucumber
    1/2 Lemon, squeezed
    Juice all produce, drink fresh and enjoy!
